Barrel Aged Brews

Our Barrel Program is a collaborative, member-driven initiative focused on producing high-quality barrel-aged beer, cider, and mead. Members work together to select styles, contribute product, and manage the aging process from fill to final packaging.  ​This program emphasizes education, experimentation, and craftsmanship while providing members with hands-on experience in barrel aging.

How the Program Works

Collaborative Fills:

 

  Barrels are filled using contributions from multiple members. Each participant brews a portion of the total volume based on an agreed-upon recipe and style.

Style Selection:

 

  Upcoming barrel fills are determined through member discussion and voting.

 

  Styles are selected based on:

  • Barrel availability and prior use

  • Seasonal timing

  • Member interest and participation


Cost Sharing:

 

  Participants contribute a flat fee per project to cover:

  • Barrel acquisition or maintenance

  • Logistics and storage

  • Program-related supplies


Barrel Lifecycle:

 

  Barrels are reused across multiple projects when appropriate.

 

Typical progression may include:

  • Cider or mead fills

  • Followed by beer (e.g., strong ales or stouts)

 

  Barrels are retired or sold when they no longer meet quality standards.

Participation Guidelines
To Join a Barrel Fill

 

Members:

 

  • Sign up during the project announcement period

  • Brew and deliver their portion of the agreed recipe on time

  • Follow all volume and quality requirements

Expectations:

  • Consistency with the base recipe is critical

  • Clean fermentation and proper handling are required

  • Timely communication with the program coordinator is expected

Sampling and Pull Decisions

Barrels are monitored throughout the aging process.

 

Sampling may occur:

  • At scheduled intervals

  • During club meetings

  • With input from participating members

 

Final pull decisions are based on:

  • Flavor development

  • Balance and integration

  • Overall readiness

  • Aging until ~ Aug 2026

Imperial Stout (Chocolate)

  • Filled Oct 2025

  • Aging in a port barrel with prior spirit character until ~Jul 2026

  • Under periodic sampling to determine optimal packaging time
